Instructions
- Char the Scallions: Heat a skillet over medium-high heat. Add whole scallions and cook, turning occasionally, until softened and lightly charred on both sides. Remove from the skillet and let cool slightly to handle.
- Make the Salsa Verde: Roughly chop the charred scallions. Add them to a food processor along with fresh parsley leaves, garlic, salt, red pepper flakes (if using), and olive oil. Pulse a few times until the mixture is thick and spoonable, with some texture remaining—do not over-process into a smooth puree.
- Whip the Feta: In a clean food processor, combine crumbled feta cheese, full-fat Greek yogurt, 2 tablespoons olive oil, fresh lemon juice, and black pepper. Blend thoroughly until the mixture becomes completely smooth and creamy with no lumps.
- Assemble the Dip: Spread the whipped feta mixture evenly into a shallow serving bowl. Generously spoon the green salsa verde on top, allowing some of the olive oil to drizzle naturally over the surface for an attractive finish. Serve immediately or chilled.
