Description

This flavorful Onion Boil recipe features sweet onions hollowed out and stuffed with a rich, spiced butter mixture. Baked until tender and optionally broiled for a caramelized finish, these onions are a delicious and aromatic side dish perfect for adding depth to any meal.

Ingredients

Scale

Onion Preparation

  • 2 large sweet onions
  • 2 Tablespoons butter, divided

Spice Mixture

  • 2 teaspoons chili onion crunch
  • 1 teaspoon minced garlic
  • 1 teaspoon paprika (smoked or regular)
  • 1 teaspoon Old Bay seasoning
  • 1 teaspoon Cajun seasoning blend
  • 1 teaspoon Italian seasoning blend
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper

Instructions

  1. Preheat Oven: Preheat your oven to 375°F to prepare for baking the onions.
  2. Prepare Onions: Peel the onions and carefully cut a roughly 1-inch diameter hole into the top of each. Use a small spoon or butter knife to hollow out the center about halfway down, creating a well for the stuffing.
  3. Add Butter: Slice one tablespoon of butter into two pieces and place one piece inside the hollowed center of each onion.
  4. Make Spice Butter: Melt the remaining tablespoon of butter in a microwave-safe bowl. Stir in chili onion crunch, minced garlic, paprika, Old Bay, Cajun seasoning, Italian seasoning, salt, and black pepper until well combined.
  5. Fill and Coat Onions: Pour the seasoned melted butter over and inside the onions, filling the wells and spreading some over the outer layers.
  6. Wrap and Bake: Wrap each onion tightly in foil and place them in a baking dish. Bake for 50-60 minutes until the onions are fork-tender, checking for tenderness and extending cooking time by 10-minute intervals if needed.
  7. Unwrap and Adjust: Carefully peel back the foil from the top of the onions. Add extra melted butter and seasoning if desired to enhance the flavor.
  8. Optional Broil: For a caramelized top, set your oven to broil and place the onions back in the oven for 2-3 minutes, watching closely to prevent burning.

Notes

  • Use sweet onions for the best flavor and natural sweetness.
  • Chili onion crunch adds both texture and a spicy kick; you can adjust or omit according to taste.
  • Wrapping onions tightly in foil helps them steam and cook evenly.
  • Be careful during broiling to avoid burning the onions; watch them closely as this happens quickly.
  • This recipe serves 2 but can be easily doubled for more servings.
