Description

Enjoy a rich and creamy Smothered Chicken and Rice dish that combines tender chicken breasts with flavorful rice, vegetables, and a luscious sauce. This comforting recipe is perfect for family dinners and is simple to prepare, making it a delicious and satisfying meal staple.

Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Vegetables & Aromatics

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 cup broccoli florets

Rice & Sauce

  • 1 cup long-grain rice
  • 1 cup heavy cream
  • 1 cup chicken broth

Garnish

  • Fresh parsley for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the smothered chicken and rice.
  2. Brown the Chicken: Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then brown each side for 4-5 minutes until golden. Remove the chicken from the skillet and set aside.
  3. Sauté Aromatics: In the same skillet, add the chopped onion and minced garlic. Sauté for about 3 minutes until the onions become translucent and fragrant.
  4. Cook Vegetables: Add the sliced mushrooms and broccoli florets to the skillet. Cook them for 5 minutes, stirring occasionally to soften and blend flavors.
  5. Add Rice: Stir in the long-grain rice and cook for 2 minutes, allowing the rice to absorb the flavors from the vegetables and aromatics.
  6. Add Liquids: Pour in the chicken broth and heavy cream, stirring well to combine everything into a creamy mixture.
  7. Assemble for Baking: Nestle the browned chicken breasts back into the skillet, spooning the rice mixture over and around the chicken to cover it evenly.
  8. Bake: Transfer the entire skillet to the preheated oven. Bake for 25-30 minutes, or until the chicken is cooked through and the rice is tender and creamy.
  9. Garnish & Serve: Remove the skillet from the oven, garnish with fresh parsley, and serve hot for a comforting, delicious meal.

Notes

  • Make sure to brown the chicken properly to develop flavor and lock in moisture.
  • You can substitute broccoli with other vegetables like green beans or bell peppers if preferred.
  • Use a skillet that is oven-safe to avoid transferring the contents and losing any rice or sauce.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated gently on the stovetop.
  • For a lighter option, substitute heavy cream with half-and-half, but the dish will be less rich.
