Instructions
- Preheat Oven: Preheat your oven to 450°F (232°C) to ensure it is hot enough to roast the vegetables to tender perfection.
- Prepare Vegetables: Arrange the peeled and chopped potatoes, green, red, and yellow bell peppers, and large onion chunks evenly on a sheet pan in a single layer to allow even roasting.
- Season Vegetables: Drizzle the vegetables with ¼ cup of olive oil, then sprinkle generously with kosher salt and freshly ground black pepper to enhance their natural flavors.
- Roast Vegetables: Place the sheet pan in the preheated oven and roast for 45 minutes, stirring the vegetables halfway through to ensure even cooking and caramelization.
