Phyllo Base

  • 1 cup whole milk

  • 1 cup shredded mozzarella or cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish thoroughly to prevent sticking.
  2. Make Filling: In a mixing bowl, whisk together the eggs, whole milk, sour cream or Greek yogurt, crumbled feta, shredded mozzarella, salt, and black pepper until the mixture is smooth and fully combined.
  3. Prepare Phyllo Dough: Unroll the phyllo dough carefully and keep it covered with a damp towel to prevent it from drying out while you work.
  4. Layer Phyllo Sheets: Take each phyllo sheet and scrunch or loosely ruffle it before layering it in the prepared baking dish. Continue layering until the bottom of the dish is fully covered.
