Chicken & Marinade
- 1 lb chicken breasts (about 2 large breasts)
- 1/2 cup Greek dressing
Base
- 2 bags Success Boil-in-Bag White Rice or 2 heaping cups cooked white rice
- 1 (15.5 oz) can chickpeas, drained and rinsed
Vegetables & Toppings
- 1 large cucumber, chopped
- 1 cup quartered grape tomatoes
- 1/4 cup sliced red onion
- 1/2 cup crumbled feta cheese
- 1/4 cup tzatziki sauce
- 1/4 cup hummus
Instructions
- Marinate the chicken: Place the chicken breasts in a bowl and pour the Greek dressing over them. Coat both sides of the chicken thoroughly and refrigerate for at least 1 hour to allow the flavors to infuse.
- Prepare the rice: Cook the Success Boil-in-Bag White Rice according to the package instructions until tender and fluffy.
- Cook the chicken: Preheat an air fryer to 400°F. Air fry the marinated chicken breasts for 12-15 minutes until cooked through and slightly crispy on the outside. Alternatively, bake the chicken in a 400°F oven for about 20 minutes.
- Assemble the bowls: Divide the cooked rice evenly among four bowls. Top each with sliced cooked chicken, chickpeas, chopped cucumber, quartered grape tomatoes, sliced red onion, dollops of hummus and tzatziki, and sprinkle with crumbled feta cheese. Drizzle extra Greek dressing if desired.
