Description

This Honey Sesame Chicken Noodle Bake is a delicious and comforting one-dish meal featuring tender chicken breast, spaghetti noodles, and a colorful frozen vegetable medley all baked together in a flavorful honey sesame sauce. The dish is perfectly balanced with a hint of sweetness from honey and brown sugar, a touch of tang from rice vinegar, and warm notes of ginger and garlic. Easy to prepare and baked to perfection, this hearty casserole makes a great family dinner or meal prep option.

Ingredients

Scale

Chicken and Noodles

  • 1 pound chicken breasts, cut into 1-inch pieces
  • 8 ounces spaghetti noodles, uncooked
  • 1 (10.8-ounce) frozen vegetable medley (Asian medley recommended)

Sauce

  • 2 cups chicken broth
  • ¼ cup soy sauce
  • ¼ cup honey
  • 1 tablespoon brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • ½ teaspoon ground ginger
  • 1 teaspoon minced garlic
  • 1 tablespoon cornstarch

Garnish

  • Sesame seeds
  • Chopped green onion

Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 400°F (200°C). Spray a 13 x 9 x 2-inch rectangular baking dish with nonstick cooking spray to prevent sticking.
  2. Layer Noodles and Vegetables: Place the uncooked spaghetti noodles evenly at the bottom of the prepared baking dish. Spread the frozen vegetable medley evenly on top of the noodles.
  3. Add Chicken: Arrange the cut chicken breast pieces evenly on top of the noodles and vegetable layer.
  4. Make the Sauce: In a medium bowl, whisk together chicken broth, soy sauce, honey, brown sugar, rice vinegar, sesame oil, ground ginger, minced garlic, and cornstarch until smooth and well combined.
  5. Pour Sauce Over Ingredients: Pour the prepared sauce evenly over the chicken, vegetable, and noodle layers in the baking dish.
  6. Cover and Bake: Cover the baking dish with aluminum foil. Bake in the preheated oven for 30 minutes to cook the chicken and start softening the noodles.
  7. Uncover and Continue Baking: Remove the foil carefully, and gently stir the mixture to loosen the noodles from the bottom of the dish. Return the uncovered dish to the oven and bake for an additional 20 minutes, or until the chicken is fully cooked through and the noodles are tender.
  8. Garnish and Serve: Once baked, sprinkle sesame seeds and chopped green onions over the top for added texture and flavor. Serve warm.

Notes

  • You can substitute spaghetti noodles with other pasta shapes like fettuccine or linguine if desired.
  • For added spice, consider adding a pinch of red pepper flakes to the sauce.
  • Ensure the chicken is cooked to an internal temperature of 165°F (74°C) for food safety.
  • This dish can be prepared ahead and refrigerated before baking.
  • Leftovers store well in the refrigerator for 2-3 days and reheat nicely in the oven or microwave.
