Ingredients
Scale
Chicken
- 2 tbsp olive oil
- 1 1/2 lbs boneless skinless chicken breast, cut into bite-sized pieces
- Salt and black pepper, to taste
- 1 tsp paprika
- 1 tsp garlic powder
- Zest and juice of 2 limes
- 3 tbsp honey
Rice and Toppings
- 2 cups cooked white or jasmine rice
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 2 tbsp chopped fresh cilantro (optional)
Instructions
- Season the chicken: Heat olive oil in a large skillet over medium heat. Meanwhile, season the bite-sized chicken pieces with salt, black pepper, paprika, and garlic powder to taste, ensuring they are evenly coated.
- Cook the chicken: Add the seasoned chicken to the hot skillet and cook for 6–8 minutes, stirring occasionally, until the chicken turns golden brown and is fully cooked through with no pink inside.
- Add lime and honey glaze: Reduce the heat to low. Stir in the lime zest, lime juice, and honey. Mix well to coat the chicken evenly with the glaze.
- Simmer and thicken glaze: Let the chicken simmer in the glaze for 2–3 minutes until the sauce becomes glossy, thickened, and fragrant, allowing the flavors to meld together.
- Assemble the dish: Place a layer of warm cooked rice onto each plate or bowl, creating a base for the chicken stack.
- Top with chicken and toppings: Spoon the honey lime chicken over the rice. Sprinkle crumbled feta cheese and freshly chopped parsley and cilantro over the top for added flavor and freshness.
- Serve immediately: Enjoy your dish warm, serving it right after assembling to experience the perfect combination of textures and tastes.

- Jasmine rice is recommended for its fragrant aroma, but you can substitute with any white rice you prefer.
- Fresh herbs like parsley and cilantro add brightness, but you can use just one or substitute with mint for a different flavor profile.
