Ingredients
Scale
For the Chicken Marinade
- 2 large boneless, skinless chicken breasts
- 2 tablespoons olive oil
- Zest and juice of 1 lime
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1/2 teaspoon ground cumin
- Salt and black pepper, to taste
For the Mango Jasmine Rice
- 1 cup jasmine rice
- 1 3/4 cups water or chicken broth
- 1 large ripe mango, diced
- 1/4 cup chopped fresh cilantro
- 1/4 cup finely diced red onion (optional)
Instructions
- Prepare the Marinade: In a bowl, whisk together olive oil, lime zest, lime juice, honey, minced garlic, ground cumin, salt, and black pepper until well combined to create the marinade.
- Marinate the Chicken: Add the chicken breasts to the marinade, ensuring they are fully coated. Cover and let them marinate for at least 20 minutes to infuse flavors.
- Cook the Jasmine Rice: Rinse the jasmine rice under cold water. Cook the rice using 1 3/4 cups water or chicken broth according to package instructions until tender. Fluff the rice with a fork and set aside to cool slightly.
- Grill the Chicken: Heat a grill pan or skillet over medium-high heat. Place marinated chicken breasts on the pan and cook for 5 to 6 minutes per side until the chicken is fully cooked and has a lightly caramelized surface. Remove from heat and let rest for a few minutes, then slice the chicken thinly.
- Prepare the Mango Rice Mix: In a bowl, gently mix the cooked jasmine rice with diced mango, chopped cilantro, and optional finely diced red onion. Season lightly with salt to taste and mix carefully to combine.
- Assemble and Serve: On individual plates, layer the mango jasmine rice mixture first and then top with slices of the honey lime chicken. Serve warm for a vibrant and delicious meal.
Notes
- Marinating the chicken longer than 20 minutes (up to 2 hours) will intensify the flavors.
- Use chicken broth instead of water to cook jasmine rice for extra flavor.
- Ripe mango adds sweetness and texture; unripe mango will be tart and less suitable.
- Red onion is optional but adds a nice crunch and sharpness enhancing the dish.
- Leftovers can be stored in an airtight container in the fridge for up to 2 days and reheated gently.
