Description

This Healthy Spinach Artichoke Dip is a creamy, flavorful appetizer perfect for any occasion. Made with nutrient-rich spinach, artichoke hearts, Parmesan cheese, and Greek yogurt, it offers a lighter twist on the classic dip without sacrificing taste. Enjoy it cold or baked until bubbly and golden, served with toasted bread, chips, or fresh vegetables.

Ingredients

Scale

Dip Ingredients

  • 1 can artichoke hearts (14 oz)
  • 1 cup frozen spinach (or kale) (60g), thawed and excess moisture squeezed out
  • 2/3 cup Parmesan cheese (or nutritional yeast) (60g)
  • 1/2 cup Greek yogurt (or dairy-free alternative) (120g)
  • 1/2 tsp salt
  • 1/2 tsp garlic powder

Instructions

  1. Preheat Oven: If you prefer a warm dip, preheat your oven to 350° Fahrenheit (177° Celsius).
  2. Prepare Vegetables: Drain the artichoke hearts well without rinsing, then roughly chop them. Squeeze any excess liquid from the thawed spinach, and chop roughly to combine textures evenly.
  3. Mix Ingredients: In a heat-safe bowl, combine the chopped artichokes, spinach, Parmesan cheese, Greek yogurt, salt, and garlic powder. Stir thoroughly until all ingredients are evenly mixed into a smooth dip.
  4. Serve Cold or Warm: At this point, you can enjoy the dip cold as is, or transfer it to an oven-safe dish and bake on the center rack for 20 minutes until hot, bubbling, and slightly browned on top. Alternatively, microwave the dip for 5 minutes, stirring halfway through, until heated evenly.
  5. Serve: Serve hot from the oven with toasted baguette slices, tortilla chips, or fresh raw vegetables for dipping.
  6. Store Leftovers: Refrigerate any leftovers in an airtight container for up to five days to maintain freshness.

Notes

  • For a vegan option, replace Parmesan with nutritional yeast and Greek yogurt with a dairy-free alternative.
  • Make sure to squeeze out as much moisture as possible from the spinach to prevent a watery dip.
  • Microwaving is a quick alternative to baking and works well for small batches.
  • Adjust salt to taste depending on the saltiness of the Parmesan cheese.
  • Serve with a variety of dippers such as toasted baguette, tortilla chips, or fresh vegetables for a healthy snack.
