Scale
Dip Ingredients
- 1 can artichoke hearts (14 oz)
- 1 cup frozen spinach (or kale) (60g), thawed and excess moisture squeezed out
- 2/3 cup Parmesan cheese (or nutritional yeast) (60g)
- 1/2 cup Greek yogurt (or dairy-free alternative) (120g)
- 1/2 tsp salt
- 1/2 tsp garlic powder
Instructions
- Preheat Oven: If you prefer a warm dip, preheat your oven to 350° Fahrenheit (177° Celsius).
- Prepare Vegetables: Drain the artichoke hearts well without rinsing, then roughly chop them. Squeeze any excess liquid from the thawed spinach, and chop roughly to combine textures evenly.
- Mix Ingredients: In a heat-safe bowl, combine the chopped artichokes, spinach, Parmesan cheese, Greek yogurt, salt, and garlic powder. Stir thoroughly until all ingredients are evenly mixed into a smooth dip.
- Serve Cold or Warm: At this point, you can enjoy the dip cold as is, or transfer it to an oven-safe dish and bake on the center rack for 20 minutes until hot, bubbling, and slightly browned on top. Alternatively, microwave the dip for 5 minutes, stirring halfway through, until heated evenly.
- Serve: Serve hot from the oven with toasted baguette slices, tortilla chips, or fresh raw vegetables for dipping.
- Store Leftovers: Refrigerate any leftovers in an airtight container for up to five days to maintain freshness.
Notes
- For a vegan option, replace Parmesan with nutritional yeast and Greek yogurt with a dairy-free alternative.
- Make sure to squeeze out as much moisture as possible from the spinach to prevent a watery dip.
- Microwaving is a quick alternative to baking and works well for small batches.
- Adjust salt to taste depending on the saltiness of the Parmesan cheese.
- Serve with a variety of dippers such as toasted baguette, tortilla chips, or fresh vegetables for a healthy snack.
