Instructions
- Roast the Sweet Potatoes: Preheat your oven to 400°F (205°C). In a mixing bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, paprika, garlic powder, cinnamon, salt, and pepper until evenly coated. Spread the sweet potatoes in a single layer on a baking sheet and roast for 40 to 45 minutes, turning halfway through, until they are caramelized and tender.
- Cook the Ground Beef and Onions: While the sweet potatoes roast, heat the remaining 1 tablespoon of olive oil in a skillet over medium heat. Add the diced onions and cook for about 5 minutes until they soften. Add the ground beef and taco seasoning to the skillet and cook, stirring occasionally, until the beef is fully browned and cooked through.
- Assemble the Bowls: Divide the roasted sweet potatoes evenly among four bowls as the base layer. Top each bowl with a portion of the seasoned ground beef mixture. Add sliced avocado and a scoop of cottage cheese on top.
- Drizzle with Hot Honey: Finish each bowl by drizzling 1/2 tablespoon of hot honey over the contents for a perfect balance of sweet heat. Serve immediately and enjoy!
