Instructions

  2. Cook the Ground Beef and Onions: While the sweet potatoes roast, heat the remaining 1 tablespoon of olive oil in a skillet over medium heat. Add the diced onions and cook for about 5 minutes until they soften. Add the ground beef and taco seasoning to the skillet and cook, stirring occasionally, until the beef is fully browned and cooked through.
  3. Assemble the Bowls: Divide the roasted sweet potatoes evenly among four bowls as the base layer. Top each bowl with a portion of the seasoned ground beef mixture. Add sliced avocado and a scoop of cottage cheese on top.
