Brownie Batter
- 1/2 cup butter, melted (1 stick)
- 1 cup granulated white sugar
- 2 large eggs
- 2/3 cup cocoa powder, spooned and leveled
- 1/2 cup all-purpose flour, spooned and leveled
- 1 cup mini chocolate chips, divided
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Spray a mini muffin tin thoroughly with baking spray or line with mini muffin liners to ensure the brownie bites don’t stick.
- Make the Brownie Batter: In a large mixing bowl, whisk together the melted butter and granulated sugar until well combined. Add the eggs and continue whisking until the mixture is smooth and creamy. Sift in the cocoa powder and flour to avoid lumps, then gently mix until just combined. Carefully fold in 3/4 cup of the mini chocolate chips.
- Scoop Batter Into Muffin Tin: Using a small cookie scoop or spoon, evenly portion the batter into the prepared mini muffin tin, filling each cup almost to the top. Sprinkle the remaining mini chocolate chips on top of each brownie bite.
- Bake Brownie Bites: Place the muffin tin in the preheated oven and bake for 14 to 16 minutes. Check doneness by inserting a toothpick in the center; it should come out with moist crumbs or chocolate but not raw batter.
- Cool and Remove: Allow the brownie bites to cool completely in the pan for firm edges. To remove, gently hold the sides of each brownie bite and twist back and forth to loosen. If needed, use a butter knife around the edges to carefully help release them without damaging their shape.
