Egg Salad Base

- 2 tbsp plain Greek yogurt
- 1 tsp Dijon mustard

- Freshly ground black pepper, to taste
Avocado Mixture
- 2 small or mini ripe avocados (heaping 3/4 cup avocado flesh)
- 2 tbsp fresh lemon juice
Instructions
- Combine Ingredients: In a medium mixing bowl, place the chopped hard-boiled eggs, finely chopped red onion, celery, fresh parsley, and dried dill. Add the Greek yogurt, Dijon mustard, kosher salt, and freshly ground black pepper. Mix gently to combine all the ingredients evenly.
- Add Avocado and Lemon Juice: Add the chunks of ripe avocado last and immediately pour the fresh lemon juice over the mixture. Using a fork, gently mash the ingredients together, ensuring some avocado chunks remain to preserve texture, avoiding a puree consistency.
