Description

A quick and flavorful recipe for Easy Saucy Ramen Noodles featuring tender tofu or veggies in a rich, savory sauce. Perfect for a satisfying weeknight meal, this dish combines simple ingredients like soy sauce, garlic, and chili garlic sauce to create a deliciously saucy and comforting bowl of noodles.

Ingredients

Scale

Noodles and Protein

  • 2 servings dry instant ramen noodles (about 140g)
  • 10 oz extra firm tofu or veggies/mushrooms (sliced)

Sauce

  • 1 cup water or vegetable broth
  • 5-7 tbsp soy sauce (adjust according to desired taste)
  • 1.5 tsp dark soy sauce (optional for color)
  • 2-3 tbsp corn starch
  • 1-3 tbsp sugar (maple syrup or other liquid sweetener)
  • 2 tbsp rice vinegar (white vinegar or lemon juice)
  • 1/4 tsp ground pepper
  • 1/2 tbsp chili garlic sauce
  • 1 tbsp sesame oil
  • 2 cloves garlic (minced, optional)

Instructions

  1. Prepare the Sauce: In a bowl, mix water or vegetable broth, soy sauce, dark soy sauce (if using), corn starch, sugar or sweetener, rice vinegar, ground pepper, chili garlic sauce, sesame oil, and minced garlic until the ingredients are well combined and smooth.
  2. Cook the Noodles: Bring a pot of water to a boil and cook the dry instant ramen noodles for 2-3 minutes less than the package instructions to keep them slightly firm. Drain and set the noodles aside.
  3. Sauté Protein and Veggies: Heat a non-stick pan over medium heat and sauté your chosen tofu, vegetables, or mushrooms until cooked through and tender, about 5-7 minutes depending on the ingredients used.
  4. Add the Sauce and Simmer: Pour the prepared sauce into the sautéed mixture in the pan. Simmer for 2-3 minutes, stirring occasionally, until the sauce thickens and coats the tofu and veggies well.
  5. Toss in the Noodles: Add the drained ramen noodles to the pan with the sauce and toss everything together carefully to ensure the noodles are evenly coated with the saucy mixture.
  6. Final Cooking: Cook the noodles with the sauce for an additional 1-2 minutes so they absorb some of the sauce flavor. Remove from heat.
  7. Serve: Serve the saucy ramen noodles hot, optionally garnished with green onions, sesame seeds, or additional chili garlic sauce as desired.

Notes

  • You can substitute tofu with your favorite vegetables or mushrooms for a vegetarian twist.
  • Adjust the amount of soy sauce and sugar to balance saltiness and sweetness to your taste.
  • If you prefer a thicker sauce, increase the corn starch slightly while mixing the sauce.
  • Use dark soy sauce for color and deeper flavor, but it’s optional.
  • Add chili garlic sauce carefully to control the spice level.
