- 10 oz frozen spinach (thawed and drained)
- 1 cup crumbled feta cheese
Egg Mixture
- 5 large eggs
- 1/2 cup milk or half-and-half
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/8 teaspoon nutmeg (optional)
- 2 tablespoons chopped fresh herbs (like dill or parsley, optional)
Sautéed Aromatics
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
Instructions
- Prepare the spinach: If using frozen spinach, thaw it completely and squeeze out as much moisture as possible. For fresh spinach, chop and sauté until wilted, then let it cool.
- Sauté onion and garlic: Heat olive oil in a skillet over medium heat. Add chopped onion and sauté for about 5–6 minutes until translucent. Add minced garlic and cook for another 30 seconds. Remove from heat and let cool slightly.
- Whisk egg mixture: In a large bowl, whisk together the eggs and milk (or half-and-half) until fully combined.
- Combine all ingredients: Add the spinach, sautéed onion and garlic, crumbled feta, nutmeg, salt, pepper, and optional fresh herbs to the egg mixture. Stir gently until everything is evenly mixed.
- Preheat oven and prepare dish: Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch baking dish with oil or butter to prevent sticking.
- Transfer mixture to baking dish: Pour the combined mixture into the prepared baking dish and smooth the top with a spatula for even baking.
- Bake the casserole: Place the dish in the preheated oven and bake for 35–40 minutes, or until the top turns golden and the center is set. Test doneness by inserting a knife; it should come out clean.
- Rest and serve: Remove the casserole from the oven and allow it to rest for 5–10 minutes before slicing. Serve warm and enjoy.
