Instructions

- Cook Beef and Onions: In a large skillet over medium heat, cook 1 lb of ground beef along with 1 cup of chopped onion until the beef is completely browned. Drain any excess grease for a healthier result.
- Add Seasoning and Tomatoes: Stir in 1 oz of taco seasoning and 10 oz of drained diced tomatoes with green chilies. Allow the mixture to simmer for 3 to 4 minutes until it thickens slightly, enhancing the flavor.
- Combine Beans, Corn and Sour Cream: Add 15 oz of drained and rinsed black beans, 1 cup of corn kernels, and 1 cup of sour cream to the skillet. Mix thoroughly until everything is well combined and creamy.
- Layer the Casserole – First Layer: Evenly spread half of the crushed 9 oz nacho cheese Doritos on the bottom of the prepared baking dish.
- Add Beef Mixture and Cheese: Spoon half of the beef mixture over the chip layer, then sprinkle with 1 cup of shredded cheddar cheese.
- Repeat Layers: Add a second layer with the remaining crushed Doritos, followed by the remaining beef mixture and top with the last cup of shredded cheddar cheese.
- Bake the Casserole: Place the casserole in the preheated oven and bake for 20 to 25 minutes, or until the cheese is melted and bubbly, indicating it is thoroughly heated.
