Ingredients
Scale
Main Ingredients
- 1 ½ cups chickpeas or white beans (rinsed and drained)
- ¾ cup quick oats or almond flour
- ¼ cup applesauce, yogurt, or pumpkin
- ¼ cup oil or nut butter of choice
- 2 tsp pure vanilla extract
- ½ tsp baking soda
- ¼ tsp salt
- 1 tsp baking powder
- ½ cup sweetener of choice (maple syrup, coconut sugar, etc.)
- ½ to ¾ cup chocolate chips
Instructions
- Preheat and Prepare Pan: Preheat the oven to 350°F (175°C) and grease a 10-inch springform pan or two 8-inch round pans thoroughly to prevent sticking.
- Blend Base Ingredients: Place the chickpeas or white beans, quick oats or almond flour, applesauce (or yogurt/pumpkin), oil or nut butter, vanilla extract, baking soda, salt, baking powder, and sweetener into a food processor and blend until the batter is smooth and homogeneous.
- Add Chocolate Chips: Remove the batter from the processor and fold in the chocolate chips carefully by hand to ensure even distribution without over-mixing.
- Pour and Bake: Transfer the batter into the prepared pan(s), spreading it evenly. Bake in the preheated oven for 35-40 minutes, or until the top is set and a toothpick inserted into the center comes out mostly clean with a few moist crumbs.
- Cool and Serve: Allow the cookie pie to cool for at least 10 minutes before carefully removing it from the pan. For the best texture and flavor, let it cool completely before slicing and serving.
Notes
- You can substitute chickpeas with white beans without affecting texture significantly.
- Use almond flour for a nutty flavor and gluten-free option; oats add a chewier texture.
- Applesauce, yogurt, or pumpkin can be used interchangeably for moisture and a mild sweetness.
- Choose your preferred oil or nut butter for different flavor profiles; coconut oil or almond butter work well.
- Adjust sweetness with maple syrup, coconut sugar, or your favorite sweetener to taste.
- Chocolate chips can be replaced with dairy-free or vegan versions if needed.
- Ensure the cookie pie cools completely for optimal slicing and to allow flavors to meld.
