Description

This Crockpot Corn Dip is a creamy, cheesy, and flavorful appetizer perfect for parties or casual gatherings. Combining whole kernel corn, creamed corn, green chiles, bacon, and a blend of cheeses and seasonings, this slow-cooked dip is effortlessly delicious and made easy with just a few simple steps in your crockpot.

Ingredients

Scale

Main Ingredients

  • 1 can (15 oz) whole kernel corn, drained
  • 1 can (15 oz) creamed corn
  • 1 small can (4 oz) diced green chiles
  • 1 cup sour cream
  • 1½–2 cups Cabot white cheddar cheese, freshly shredded
  • ½ cup cooked bacon, crumbled
  • 1 packet (or 2 tablespoons) ranch seasoning mix
  • Juice of 1 lime
  • 1/4 cup sugar
  • 8 oz cream cheese
  • 1 tsp garlic salt
  • 1 tsp garlic powder

Instructions

  1. Combine Ingredients: Add the drained whole kernel corn, creamed corn, diced green chiles, sour cream, shredded white cheddar cheese, crumbled bacon, ranch seasoning mix, lime juice, cream cheese, garlic salt, garlic powder, and sugar directly into the slow cooker. Stir gently until everything is evenly combined.
  2. Cook in Crockpot: Cover the crockpot with the lid and cook on the Low setting for 2 to 3 hours or on High for 1 to 1½ hours.
  3. Stir Occasionally: Occasionally stir the dip during cooking to help the cheese melt evenly and to prevent the dip from sticking to the edges of the crockpot.
  4. Assess Texture: As it cooks, the dip will thicken, become creamy, and reach a perfect scoopable consistency.
  5. Adjust Seasonings: Once fully melted and hot, taste the dip and adjust the flavor as desired by adding more lime juice for brightness, extra cheese for richness, a pinch of salt or pepper, or jalapeños or chili powder for heat. This step helps you customize the flavor to your preference.
  6. Keep Warm for Serving: Switch the crockpot to the Warm setting to keep the dip ready to serve.
  7. Final Stir and Serve: Stir the dip once more before transferring it to a serving bowl or leave it in the slow cooker with a serving spoon for guests to enjoy.

Notes

  • The dip can be made a few hours ahead and kept warm in the crockpot until ready to serve.
  • For a spicier kick, add diced jalapeños or a dash of chili powder during the seasoning step.
  • Substitute regular bacon with turkey bacon for a slightly leaner version.
  • Use fresh lime juice for the best flavor brightness.
  • Serve with tortilla chips, crackers, or fresh vegetable sticks.
