Description

Creamy Tuscan Salmon is a flavorful and elegant dish featuring seared salmon fillets simmered in a rich and creamy sauce made with garlic, cherry tomatoes, sun-dried tomatoes, Parmesan cheese, and fresh spinach. This recipe is perfect for a quick yet impressive dinner that combines the richness of the creamy sauce with the freshness of Mediterranean ingredients.

Ingredients

Scale

Salmon

  • 4 salmon fillets
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

Sauce

  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes
  • ½ cup sun-dried tomatoes
  • 1 cup heavy cream
  • ½ cup Parmesan cheese, grated
  • 1 cup fresh spinach

Instructions

  1. Season and sear salmon: Season the salmon fillets with salt and pepper. Heat the olive oil in a skillet over medium-high heat and sear the salmon for about 3-4 minutes on each side until golden and cooked through. Remove the salmon from the skillet and set aside.
  2. Sauté garlic and tomatoes: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Add the cherry tomatoes and sun-dried tomatoes, cooking until the cherry tomatoes begin to soften, about 3-4 minutes.
  3. Add cream, cheese, and spinach: Pour in the heavy cream and stir to combine. Sprinkle in the Parmesan cheese, stirring until it melts into the sauce. Add the fresh spinach and sauté until wilted, about 2-3 minutes.
  4. Simmer salmon in sauce: Return the seared salmon fillets to the skillet with the creamy sauce. Let everything simmer together gently for 3-5 minutes, allowing the flavors to meld and the salmon to warm through.

Notes

  • Use fresh salmon fillets for the best flavor and texture.
  • If sun-dried tomatoes are packed in oil, drain them before use.
  • Heavy cream can be substituted with half-and-half for a lighter sauce, but it will be less rich.
  • Serve with pasta, rice, or crusty bread to soak up the luscious sauce.
  • Leftovers can be stored in an airtight container in the fridge for up to 2 days.
