Description

This Creamy Spinach Chicken recipe features tender baked chicken breasts smothered in a rich, creamy sauce with fresh spinach and Parmesan cheese. It’s an easy yet elegant dish perfect for a family dinner or special occasion, combining simple ingredients into a flavorful and comforting meal.

Ingredients

Scale

Chicken

  • 4 chicken breasts
  • Salt and pepper, to taste

Creamy Spinach Sauce

  • 1 cup heavy cream
  • 1 cup fresh spinach, roughly chopped
  • ½ cup grated Parmesan cheese

Instructions

  1. Season chicken: Pat the chicken breasts dry and season both sides generously with salt and pepper to enhance flavor.
  2. Partially bake the chicken: Preheat your oven to 375°F (190°C). Place the seasoned chicken breasts in a baking dish and bake for about 15 minutes, until the chicken is partially cooked but not fully done.
  3. Add cream and spinach: Remove the baking dish from the oven and pour the heavy cream evenly over the chicken. Distribute the chopped spinach and sprinkle the grated Parmesan cheese on top.
  4. Finish baking: Return the dish to the oven and bake for another 20 minutes, or until the sauce is bubbling and the chicken is cooked through, reaching an internal temperature of 165°F (74°C).

Notes

  • For extra flavor, you can add minced garlic or a pinch of nutmeg to the cream mixture.
  • Use fresh spinach for best texture and taste; frozen spinach can be used but should be thawed and drained well.
  • This dish pairs well with pasta, rice, or crusty bread to soak up the creamy sauce.
  • For a lighter version, substitute heavy cream with half-and-half or Greek yogurt, but this will change the creaminess slightly.
