Instructions
- Prepare and Sear Chicken: Heat a heavy pot over medium heat for 2–3 minutes until hot, then add 3 tablespoons of olive oil. Place chicken thighs skin-side down and sear for about 5 minutes per side until golden brown. Remove chicken and set aside.
- Sauté Onions and Garlic: In the same pot, add thickly sliced onions and smashed garlic cloves without cleaning out the pot. Cook for 5–7 minutes, stirring occasionally, until onions are softened and translucent, allowing the fond to flavor the mixture.
- Add Chicken and Broth: Return the seared chicken to the pot nestled among the onions and garlic. Pour in 3 cups of chicken broth, add the fresh rosemary sprigs, and season with salt and black pepper. Stir gently to combine without submerging the chicken completely.
- Simmer the Stew: Bring the mixture to a gentle simmer, cover the pot, reduce heat to low, and let cook slowly for 40 minutes until the chicken is tender and flavors meld.
