Description

These Delicious Coffee Cake Donuts are soft, moist, and topped with a crumbly cinnamon-sugar topping. Baked to perfection and drizzled with a smooth vanilla glaze, they melt in your mouth and make a perfect treat for breakfast or dessert.

Ingredients

Scale

For the crumb topping:

  • 1/4 cup unsalted butter, melted
  • 1/4 cup light brown sugar, packed
  • 2 tablespoons granulated sugar
  • 1/2 cup all-purpose flour
  • 1 1/2 teaspoons cinnamon
  • Pinch of salt

For the donuts:

  • 1 1/2 cups all-purpose flour
  • 1/3 cup light brown sugar, packed
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 large egg, at room temperature
  • 1/3 cup sour cream
  • 1/4 cup Chosen Foods Avocado Oil
  • 1/4 cup milk
  • 2 teaspoons vanilla extract

For the vanilla glaze:

  • 1/2 cup confectioners sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat and prepare the pan: Preheat your oven to 350°F. Lightly spray a standard donut pan with Chosen Foods Avocado Oil Spray and set aside to ensure the donuts don’t stick during baking.
  2. Make the crumb topping: In a small bowl, combine the melted butter, brown sugar, granulated sugar, flour, cinnamon, and a pinch of salt. Mix together with a fork until the mixture clumps into crumbs. Set this aside for later use as the crumb topping.
  3. Mix the dry ingredients for donuts: In a medium bowl, whisk together the all-purpose flour, light brown sugar, baking soda, baking powder, and salt to evenly distribute the leavening agents and sugar.
  4. Mix the wet ingredients: In a separate bowl, whisk the egg, sour cream, avocado oil, milk, and vanilla extract until the mixture is smooth and homogenous.
  5. Combine wet and dry ingredients: Pour the wet ingredient mixture into the bowl with the dry ingredients and stir gently just until combined. The batter will be thick and slightly lumpy; avoid overmixing as it could make the donuts tough.
  6. Pipe batter and apply topping: Transfer the batter into a large piping bag and cut the tip to create a half-inch opening. Pipe the batter evenly into the donut molds, filling each halfway. Then, gently press the prepared crumb topping mixture onto the batter surface so it sticks.
  7. Bake the donuts: Place the donut pan in the oven and bake for about 13 minutes until golden brown and the donuts spring back when touched lightly. After baking, allow the donuts to cool in the pan for 5 minutes before carefully removing them and transferring to a wire rack to cool slightly.
  8. Prepare the glaze: In a small bowl, whisk together the confectioners sugar, milk, vanilla extract, and a pinch of salt until smooth and lump-free.
  9. Glaze the donuts: Drizzle the prepared vanilla glaze over the cooled donuts evenly. Let the glaze set slightly before serving for the best texture and flavor.

Notes

  • You can store these donuts in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
  • Room temperature eggs and dairy will help the batter mix more evenly.
  • Make sure not to overmix the batter to keep the donuts tender and light.
  • The crumb topping can be customized with chopped nuts or oats for added texture.
  • Use a piping bag to ensure even donut shapes and ease in filling the molds.
  • Let the glaze set before stacking or packaging donuts to prevent sticking.
