Instructions
- Preheat the oven: Preheat your oven to 350℉ (175℃) and prepare a muffin tin by placing a cupcake or muffin liner in each cup to prevent sticking.
- Arrange the crackers: Place one Ritz cracker in each lined muffin cup, creating a base for the toffee layer.
- Make the toffee: In a medium pot over medium-low heat, melt 1 cup of butter and stir in 1 cup of packed brown sugar. Bring the mixture to a rolling boil while stirring occasionally. Boil for 3 minutes until it bubbles vigorously and turns an amber color.
- Pour the toffee over crackers: Carefully ladle about 2 teaspoons of the hot toffee mixture over each Ritz cracker, coating them evenly.
- Bake to set the toffee: Place the muffin tin in the preheated oven and bake for 3-5 minutes, or until the toffee starts bubbling to ensure it is set and bubbling nicely.
- Add and melt the chocolate: Remove the muffin tin from the oven and immediately sprinkle the 2 cups of semi-sweet chocolate chips evenly over each toffee-coated cracker. Let the chocolate sit for 1-2 minutes to soften, then use a spatula to spread it evenly. If the chocolate is not melting well, return the tin to the oven for 1-2 minutes and spread again.
- Top with sprinkles: Once the chocolate is spread smoothly, sprinkle 1/4 cup of your choice of sprinkles or crushed candies over the chocolate while still soft.
- Cool and serve: Allow the cookies to cool completely at room temperature or refrigerate for 30 minutes to 1 hour until the chocolate hardens. Once set, pop the cookies out of the muffin tin, serve, and enjoy!
- Storage: Store leftovers in an airtight container at room temperature or refrigerated to maintain freshness.
