Description

Christmas Crack Cookies, also known as Cracker Toffee Cookies, are a delightful holiday treat featuring a crispy Ritz cracker base topped with buttery toffee, melted chocolate, and festive sprinkles or crushed candies. They combine sweet, salty, and crunchy textures for a perfect holiday indulgence that’s easy to make and sure to impress.

Ingredients

Scale

Base

  • 24 Ritz crackers

Toffee

  • 1 cup butter (2 sticks, salted or unsalted)
  • 1 cup brown sugar (packed)

Toppings

  • 2 cups semi-sweet chocolate chips (or milk chocolate chips, white chocolate chips, or a combination)
  • 1/4 cup sprinkles (or crushed candy canes, M&M’s, etc.)

Instructions

  1. Preheat the oven: Preheat your oven to 350℉ (175℃) and prepare a muffin tin by placing a cupcake or muffin liner in each cup to prevent sticking.
  2. Arrange the crackers: Place one Ritz cracker in each lined muffin cup, creating a base for the toffee layer.
  3. Make the toffee: In a medium pot over medium-low heat, melt 1 cup of butter and stir in 1 cup of packed brown sugar. Bring the mixture to a rolling boil while stirring occasionally. Boil for 3 minutes until it bubbles vigorously and turns an amber color.
  4. Pour the toffee over crackers: Carefully ladle about 2 teaspoons of the hot toffee mixture over each Ritz cracker, coating them evenly.
  5. Bake to set the toffee: Place the muffin tin in the preheated oven and bake for 3-5 minutes, or until the toffee starts bubbling to ensure it is set and bubbling nicely.
  6. Add and melt the chocolate: Remove the muffin tin from the oven and immediately sprinkle the 2 cups of semi-sweet chocolate chips evenly over each toffee-coated cracker. Let the chocolate sit for 1-2 minutes to soften, then use a spatula to spread it evenly. If the chocolate is not melting well, return the tin to the oven for 1-2 minutes and spread again.
  7. Top with sprinkles: Once the chocolate is spread smoothly, sprinkle 1/4 cup of your choice of sprinkles or crushed candies over the chocolate while still soft.
  8. Cool and serve: Allow the cookies to cool completely at room temperature or refrigerate for 30 minutes to 1 hour until the chocolate hardens. Once set, pop the cookies out of the muffin tin, serve, and enjoy!
  9. Storage: Store leftovers in an airtight container at room temperature or refrigerated to maintain freshness.

Notes

  • You can customize the chocolate chips with milk chocolate, white chocolate, or a combination for varied flavors.
  • Sprinkles can be substituted with crushed candy canes, M&M’s, or other festive candies for different textures and tastes.
  • Use salted or unsalted butter according to your preference; salted butter adds a nice contrast to the sweetness.
  • For easier cleanup, be sure to use muffin liners in the tin.
  • Cooling in the fridge speeds up chocolate setting but can be skipped if you prefer to cool at room temperature.
