Description

These Chipotle Honey Glazed Salmon Tacos offer a delightful combination of smoky, sweet, and tangy flavors. Grilled or baked salmon is coated in a zesty honey-chipotle glaze, shredded, and served in warm corn tortillas with fresh mango salsa and crunchy cabbage for a vibrant and healthy meal perfect for a quick weeknight dinner or casual gathering.

Ingredients

Scale

Glaze

  • ¼ cup honey
  • 2 tablespoons lime juice
  • 1 teaspoon chipotle powder
  • ½ teaspoon cumin
  • ½ teaspoon paprika
  • 1 tablespoon fresh cilantro, chopped

Main

  • 1 pound fresh salmon
  • 8 corn tortillas
  • 1 cup mango salsa (prepared)
  • ½ cup red cabbage, shredded
  • ½ cup green cabbage, shredded

Instructions

  1. Preheat grill or oven: Heat your grill to medium-high or preheat your oven to 400°F (200°C) to prepare for cooking the salmon.
  2. Prepare the glaze: In a small bowl, thoroughly whisk together the honey, lime juice, chipotle powder, cumin, paprika, and freshly chopped cilantro until well combined to create a flavorful glaze.
  3. Glaze the salmon: Place the salmon in a foil ‘basket’ or on a lined baking sheet and evenly coat it with the prepared honey-chipotle glaze.
  4. Cook the salmon: Place the salmon on the preheated grill or in the oven and cook for approximately 20 minutes until the fish is fully cooked and flakes easily with a fork.
  5. Shred the salmon: Remove the cooked salmon from the heat and carefully shred it into bite-sized pieces using a fork.
  6. Assemble the tacos: Warm the corn tortillas and fill each with a portion of shredded salmon. Drizzle with additional glaze, then top with vibrant mango salsa and a mix of shredded red and green cabbage for crunch.

Notes

  • You can prepare the mango salsa ahead of time or purchase a high-quality store-bought version for convenience.
  • Use foil to make cleanup easier whether grilling or baking the salmon.
  • For an extra smoky flavor, grilling the salmon is preferred over baking.
  • Adjust chipotle powder amount to your desired spice level.
  • Warm tortillas on a skillet or directly on the grill for a few seconds for best texture.
