Instructions
- Prepare the filling: In a mixing bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until the mixture is smooth and creamy, ensuring there are no lumps.
- Assemble the egg rolls: Lay an egg roll wrapper on a flat surface with one corner pointing toward you, forming a diamond shape. Spoon 2 tablespoons of the cream cheese mixture in the center, then add 1 tablespoon of cherry pie filling on top.
- Wrap the egg rolls: Fold the bottom corner of the wrapper over the filling, then fold in the two side corners tightly. Brush the top corner with beaten egg to help seal the egg roll, then roll it up tightly to enclose the filling completely. Repeat this process with the remaining wrappers and filling.
- Heat the oil: Pour vegetable oil into a deep skillet to about 1-2 inches depth and heat over medium heat until it reaches 350°F (175°C), suitable for frying.
- Fry the egg rolls: Carefully place a few egg rolls into the hot oil without overcrowding. Fry each side for 2-3 minutes or until the wrappers turn golden brown and crispy, turning them gently with tongs to cook evenly.
- Drain and serve: Remove the fried egg rolls using a slotted spoon and place them on paper towels to drain excess oil. Dust with powdered sugar if desired and serve warm for the best taste and texture.
