Description

This Bruschetta Chicken recipe features juicy grilled chicken breasts topped with a fresh and vibrant bruschetta mixture of tomatoes, garlic, basil, and balsamic vinegar. Finished with melted mozzarella and a drizzle of balsamic glaze, this dish is a flavorful and elegant meal perfect for any occasion.

Ingredients

Scale

For the Chicken Marinade

  • 4 Boneless, Skinless Chicken Breasts
  • 1/3 cup Extra-Virgin Olive Oil
  • 3 Tablespoons Balsamic Vinegar
  • 2 Garlic Cloves, minced (or 1/2 teaspoon garlic powder)
  • 1 teaspoon Italian Seasoning
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

For the Fresh Bruschetta

  • 4 ripe Roma Tomatoes, diced
  • 2 Garlic Cloves, minced
  • 2 to 3 Tablespoons Fresh Basil, chopped (about 8 leaves)
  • 1 Tablespoon Balsamic Vinegar
  • 2 Tablespoons Extra-Virgin Olive Oil
  • 1/2 teaspoon Salt
  • 1 teaspoon Pepper

For Topping

  • 1 cup Shredded Mozzarella Cheese or 4 slices Mozzarella
  • Parmesan Cheese, for garnish
  • 1 Tablespoon Balsamic Glaze (may use 2 teaspoons)

Instructions

  1. Marinate the Chicken: Place the chicken breasts in a zip-lock bag or bowl and pour the marinade made of olive oil, balsamic vinegar, garlic, Italian seasoning, salt, and pepper over them. Seal and refrigerate for at least 30 minutes, ideally 2 to 4 hours, to allow the flavors to penetrate the meat.
  2. Make the Fresh Bruschetta: In a bowl, combine the diced tomatoes, minced garlic, chopped fresh basil, balsamic vinegar, olive oil, salt, and pepper. Stir well and let it sit at room temperature for 15 to 20 minutes to allow the flavors to blend perfectly.
  3. Grill the Chicken: Preheat your grill to medium-high heat. Place the marinated chicken breasts on the grill and cook for about 6 to 7 minutes per side, depending on thickness, until the internal temperature reaches 165°F (74°C). During the last 1 to 2 minutes of grilling, add the mozzarella cheese on top of each breast and close the grill lid to let the cheese melt.
  4. Assemble and Serve: Transfer the grilled chicken onto a serving platter. Spoon the fresh bruschetta mixture generously over each chicken breast. Drizzle with balsamic glaze and garnish with extra basil leaves and Parmesan cheese. Serve immediately.

Notes

  • For best flavor, marinate the chicken for at least 2 hours or overnight.
  • You can substitute mozzarella with provolone or fontina cheese if preferred.
  • If a grill is unavailable, you may cook the chicken on a stovetop grill pan or broil in the oven until cooked through.
  • To make it lower calorie, reduce the amount of olive oil used in marinade and bruschetta.
  • Fresh basil is key for authentic bruschetta flavor; avoid dried basil here.
