Description

These Breakfast Rolls with Turkey Sausage, Egg, and Cheese are a delicious and convenient morning treat. Flaky crescent roll dough is filled with flavorful cooked turkey sausage, fluffy scrambled eggs, shredded cheddar cheese, and fresh green onions, then baked until golden brown. Perfect for a quick breakfast or brunch that serves six people.

Ingredients

Scale

Dough

  • 1 can refrigerated crescent roll dough (8 oz)

Filling

  • 6 oz turkey breakfast sausage, cooked and crumbled
  • 4 large eggs
  • 1 tablespoon milk
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped green onions
  • 1 tablespoon unsalted butter
  • Salt and black pepper to taste

Instructions

  1. Preheat Oven: Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
  2. Cook Sausage: In a skillet over medium heat, cook the turkey sausage until it is browned and crumbled into small pieces. Once cooked, set it aside to cool slightly.
  3. Prepare Scrambled Eggs: In a bowl, whisk together the eggs, milk, salt, and black pepper. Melt the butter in a skillet over medium heat, then pour in the egg mixture. Cook, stirring gently, until the eggs are just set but still soft. Remove from heat to prevent overcooking.
  4. Assemble Rolls: Unroll the crescent dough and separate it into individual triangles. Spoon a portion of scrambled eggs, cooked sausage, shredded cheddar cheese, and chopped green onions onto the wide end of each triangle.
  5. Roll Up: Starting from the wide end, roll each triangle tightly, enclosing the filling, and place the rolls seam-side down on the prepared baking sheet.
  6. Bake: Bake the rolls in the preheated oven for 15-18 minutes or until they turn golden brown and the dough is cooked through. Serve warm for best flavor and texture.

Notes

  • Use low-fat or reduced-fat cheddar cheese for a lighter version.
  • Green onions can be substituted with regular onions or chives.
  • Make sure not to overcook the scrambled eggs; they will continue to cook slightly during baking.
  • These rolls can be made ahead and reheated in the oven or microwave.
  • For a spicy kick, add a pinch of red chili flakes or diced jalapeños to the filling.
