Description

Creamy and flavorful Blue Cheese Mashed Potatoes featuring garlic-infused butter and fresh rosemary, baked to perfection with melted blue cheese on top. A comforting side dish perfect for enhancing any main course.

Ingredients

Scale

Potatoes

  • 2 pounds russet potatoes (peeled and cubed)

Flavorings and Butter

  • 6 tablespoons unsalted butter
  • 2 cloves garlic (crushed)
  • 1 teaspoon ground black pepper
  • 1 teaspoon steak seasoning
  • 1 teaspoon kosher salt
  • 1 tablespoon fresh rosemary (chopped)

Cheese

  • 4 ounces blue cheese crumbles

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for the final baking step.
  2. Boil Potatoes: Place the peeled and cubed potatoes into a large pot of boiling water and cook for about 15 minutes or until they are fork tender, indicating they are ready to be mashed.
  3. Melt Butter and Infuse Flavors: While potatoes cook, add the butter, crushed garlic, ground black pepper, steak seasoning, kosher salt, and chopped fresh rosemary into a small skillet over medium heat. Heat until the butter melts completely.
  4. Simmer Flavored Butter: Reduce the temperature to low and let the butter and seasonings gently combine and infuse for 5 to 10 minutes to deepen the flavor.
  5. Mash Potatoes and Mix Butter: Drain the cooked potatoes and return them to the pot on low heat. Use an electric hand mixer to mash the potatoes until smooth, then hand mix in the garlic rosemary butter and half of the blue cheese crumbles until evenly combined.
  6. Prepare for Baking: Transfer the mashed potatoes into an oven-safe bowl or casserole dish. Sprinkle the remaining blue cheese evenly on top of the mashed potatoes.
  7. Bake to Finish: Place the dish in the preheated oven and bake for 5 to 7 minutes, allowing the blue cheese on top to melt and slightly brown, enhancing the dish’s rich flavor.

Notes

  • Russet potatoes are preferred for their fluffy texture when mashed.
  • Adjust the amount of blue cheese based on your preference for cheesiness and tang.
  • Use fresh rosemary for the best aromatic flavor; dried rosemary can be used but reduce quantity.
  • Steak seasoning adds a nice depth of flavor, but can be substituted with your favorite seasoning blend.
  • Serve immediately after baking for the best texture and flavor.
