For the Turkey:

  • 1 lb ground turkey
  • 1 tbsp sesame oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1 tbsp soy sauce
  • 1 tbsp sriracha
  • 1 tbsp honey
  • Salt and pepper to taste
  • Water as needed

For the Bang Bang Sauce:

  • 1 cup mayonnaise
  • 2/3 cup Thai sweet chili sauce
  • 1-3 tbsp sriracha (adjust for spice preference)

For Serving:

  • Cooked rice of choice (white, brown, or cauliflower rice)
  • Shredded carrots (sliced and diced as preferred)
  • Cucumbers (sliced and diced as preferred)
  • Avocado (sliced and diced as preferred)
  • Edamame (sliced and diced as preferred)


Instructions

  1. Make the Bang Bang Sauce: In a bowl, whisk together mayonnaise, Thai sweet chili sauce, and sriracha until smooth. This should take about 2 minutes. Adjust the amount of sriracha based on your preferred spice level.
  2. Cook the Turkey: Heat sesame oil in a skillet over medium heat. Add ground turkey and cook, breaking it into crumbles, until browned and cooked through, about 8-10 minutes.
  3. Add Seasonings: Stir in smoked paprika, garlic powder, soy sauce, sriracha, honey, salt, and pepper. Add a little water as needed to help simmer and combine flavors. Cook for another 2-3 minutes to let the sauce thicken slightly.
  4. Mix in Bang Bang Sauce: Stir in 2 tablespoons of the prepared bang bang sauce into the turkey mixture to coat it evenly. Reserve the remaining sauce for serving. Keep the turkey warm until ready to assemble.
  5. Assemble Bowls: In serving bowls, layer cooked rice, then spoon the turkey mixture over the top. Add your choice of shredded carrots, cucumbers, avocado, and edamame. Drizzle the remaining bang bang sauce over the assembled bowls. Serve immediately and customize your toppings as you like.
