Corn Ribs
- 4 ears corn (husks removed)
- 1½ tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
Honey-Butter Glaze
- 3 tbsp butter (melted)
- 2 tbsp honey
- ½ tsp chili flakes (adjust to taste)
- Zest and juice of ½ lime
- Pinch of salt
To Finish
- Crumbled cotija cheese
- Fresh cilantro (finely chopped, optional)
Instructions
- Season the corn: Cut each ear of corn into quarters lengthwise to create corn ribs. Toss the corn ribs in a bowl with olive oil, salt, and black pepper until they are evenly coated.
- Air fry: Arrange the corn ribs in a single layer in the air fryer basket; slight overlapping is acceptable. Set the air fryer to 400°F (200°C) and cook for 10–12 minutes, shaking or turning the ribs halfway through. The ribs will curl, develop light blistering, and brown at the edges.
- Make the glaze: While the corn is cooking, combine the melted butter, honey, chili flakes, lime zest, lime juice, and a pinch of salt in a bowl. Stir well to mix all ingredients thoroughly.
- Glaze while hot: Once the corn ribs are cooked, transfer them immediately to a large bowl and toss with the prepared honey-butter glaze until the ribs are glossy and sticky.
- Finish & serve: Sprinkle crumbled cotija cheese and finely chopped fresh cilantro over the glazed corn ribs. Serve immediately while hot, ideally with napkins due to the sticky glaze.
Notes
- You can adjust chili flakes according to your preferred spice level.
- Crumbled cotija cheese adds a salty richness but can be omitted or substituted with feta for a different flavor.
- For a vegan version, substitute butter with vegan butter and omit cotija cheese or use a plant-based cheese alternative.
