Description

A simple and flavorful slow cooker recipe combining tender chicken breasts with cream cheese, sweet pineapple rings, and savory ranch seasoning. This dish creates a creamy, tangy sauce perfect for serving over rice or noodles, making an easy and comforting meal with minimal effort.

Ingredients

Scale

Chicken

  • 2 pounds boneless, skinless chicken breasts (or thighs)

Seasoning

  • 1 oz dry ranch seasoning mix (1 packet)

Dairy

  • 8 oz cream cheese (softened and cut into large cubes)

Fruit

  • 20 oz pineapple rings in juice (juice reserved)

Instructions

  1. Prepare Slow Cooker: Lightly grease the insert of a 4- to 6-quart slow cooker with oil or nonstick spray to prevent sticking during cooking.
  2. Layer Chicken: Place the chicken breasts or thighs in a single layer at the bottom of the slow cooker ensuring even cooking.
  3. Season Chicken: Sprinkle the dry ranch seasoning mix evenly over the chicken for a flavorful base.
  4. Add Pineapple: Drain the canned pineapple rings and reserve the juice. Lay the pineapple rings on top of the chicken and pour 1/2 cup of the reserved juice over the ingredients to add moisture and sweetness.
  5. Add Cream Cheese: Scatter the softened cream cheese cubes over the pineapple and chicken, which will melt down to create a rich, creamy sauce.
  6. Cook: Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until the chicken is very tender and easily pulls apart.
  7. Shred Chicken: Carefully remove the pineapple rings and set them aside. Use two forks to shred the chicken directly in the slow cooker, mixing it into the creamy sauce.
  8. Adjust Sauce: Stir in more of the reserved pineapple juice if the sauce needs thinning. Taste and adjust seasoning with extra salt or pepper as desired.
  9. Serve: Return the pineapple rings to the top of the chicken, either whole or chopped. Serve the dish hot over rice, noodles, or your preferred side.

Notes

  • You can substitute chicken thighs for breasts for a juicier texture.
  • If cream cheese isn’t softened enough, microwave it for 10-15 seconds to make cubing easier.
  • Use leftover pineapple juice to add sweetness and moisture to the dish if needed during cooking.
  • Pair this dish with steamed rice or buttered egg noodles to soak up the creamy sauce.
  • Adjust seasoning carefully as ranch seasoning mix can be quite salty.
