Instructions

  1. Cook the ground turkey: Heat a pan over medium-high heat and add the ground turkey along with about ¼ cup of water. Cover the pan and cook for 4-5 minutes, allowing the turkey to brown and cook through while retaining moisture.
  2. Add spices and garlic: Remove the lid and add turmeric, crushed red pepper flakes, black pepper, coriander, cumin, 1 teaspoon of paprika, and 1 minced garlic clove to the pan. Stir the mixture uncovered for 2-3 minutes until any excess water has evaporated and the spices are fragrant.
  3. Add vegetables and cauliflower rice: Reduce the heat to medium. Stir in the chopped carrot and red bell pepper. Add the cauliflower rice, 1 tablespoon of olive oil, the remaining teaspoon of paprika, and salt to taste. Mix well, cover the pan, and cook for 3-4 minutes to allow the flavors to meld and the vegetables to soften.
  4. Finish with jalapenos and garlic: Remove the lid and stir in the remaining 3 minced garlic cloves, pickled jalapenos, and 1 tablespoon of olive oil. Cook uncovered for an additional 2 minutes to incorporate the spicy heat and fresh garlic flavor. Stir well and serve immediately, garnished with freshly chopped herbs if desired.
